RECIPES: 5-Seed Honey Bread from Shannon Princess

5-Seed Honey Bread Recipe from
Irish Hotel Barge Shannon Princess
 
Olivia Gibbons, co-owner and chef of the popular Irish Hotel Barge Shannon Princess, shares one of her recipe for 5-Seed Honey Bread. This would pair wonderfully with her Homemade Butter Recipe that you can find HERE
 
 Ingredients
  • 500g strong white bread flour
  • 7g sachet easy-bake dried yeast (or 2 tsp Quick dried yeast)
  • 1½ tsp salt
  • 1 Tbsp honey
  • 1 Tbsp butter
  • 1 tsp allspice
  • 1 Tbsp sunflower seeds
  • 1 Tbsp each of sesame,flax ,pumpkin and poppy seeds, plus extra for sprinkling
 
Method
 
  1. Mix the honey and yeast with the warm water. Let it rest for a couple of minutes to bubble
  2. Mix the flour, butter, seeds and salt in a large bowl. Add the warm yeast mixture and mix until it comes together as a soft, not too sticky, dough. Gather it into a ball with your hands.
  3. Put the dough onto a very lightly floured surface and knead for 8-10 minutes until it feels smooth and slightly springy to touch. Pop into an oiled bowl and cover with cling film. Leave for approximately 1 hour or until doubled in size.
  4. Knock back the dough by gently kneading just 3-4 times.
  5. Shape into individual loaf. Place on a prepared oven tray, dust with flour or just egg. Wash and sprinkle some seeds.
  6. Cover and leave for 40-45 mins, or until about doubled in size.
  7. Bake at 220C/200C fan/gas 7 for 30-35 mins or until golden. Remove and cool on a wire rack. If you tap the underneath of the loaf if should be firm and sound hollow.

RECIPES: Homemade Butter from Shannon Princess

Homemade Butter Recipe from
Irish Hotel Barge Shannon Princess
 
Olivia Gibbons, co-owner and chef of the popular Irish Hotel Barge Shannon Princess, shares one of her most popular recipes: barge-made country butter. Olivia makes both cow and goat butters on board. “We also add different flavours. Our homemade butters are served with our galley-made breads, scones and pastries and are also used to add flavours to meats and fish dishes” says Olivia.


Ingredients
  • 500 ml thick cream – from either cows or goats
  • 20 ml uncultured buttermilk
  • 1 tsp flaked sea salt
  • Optional flavours: lemon, chilli, roast garlic, herbs etc…
 
Method
 
  1. Mix all the ingredients together in a bowl, cover with a clean tea towel and leave to rest at room temperature for 24 hours
  2. After 24 hours, chill the mixture for a couple of hours in a fridge. Once chilled, place the cream in a food blender and whip it vigorously until it splits
  3. Squeeze the buttermilk from the butter, and set it aside if you’re going to make the scones
  4. Place the butter on a piece of muslin or cloth for a few minutes to absorb any excess moisture
  5. Serve as is, or add whatever flavours you wish to make a herb, garlic or even a fruit butter!

Wine and Cheese
A Very French Pairing

On a hotel barge cruise, one of the wonderful ways you can experience the best of your cruising region is through the cuisine. Barge chefs and sommeliers are aficionados of the local produce and as such, they will pair some of the finest French wine and cheese. Prepare yourself for the flavors of a lifetime!


There are a number of similarities between French wine and cheese. Both go through a fermentation and ageing process; both have flavors that vary depending on the soil, sunlight, rainfall and geography of the area in which they are produced. In France, both are given the esteemed certification of AOC (Appellation d’Origine Contrôlée) to indicate the quality and provenance of their traditional production.

Like wine, the tasting of cheese is something of a science, as different regions produce so many diverse flavors in all shapes, sizes and colors. If you are a cheese connoisseur, you will certainly be able to indulge your passion on any of our hotel barge cruises in France, where each barge takes pride on procuring and serving the best each region has to offer.

 A Cheese to Please All Palates

Cheeses can be classified in a number of different ways. For example, by the country or region of origin: a hard cheese made in the Alpine climes of Beaufort would be incredibly difficult to make in the flat, western region of Normandy.

Another difference is the method of production: for example, the outside of washed rind cheeses are repeatedly dusted with ‘morge’ – a mixture of brine, whey and old cheese scrapings – to create a colored rind, while the inside of a blue cheese is pricked with needles to grow blue mould.


A Bit About Cheese

Some specialized vocabulary is helpful in the understanding of cheeses. One who has become a turophile, or lover of cheese, will no doubt be conversant with the following terms.

Specialty Cheeses – It might be said that every French cheese is a specialty cheese, but some are more special than others. Artisanal cheeses are those which have been crafted by hand from the finest ingredients, cheeses made on a farm, chalet, or mountain hut are called fermier, a monastery-type cheese is a term that describes cheeses which once were or continue to be made in the monasteries of France.

The Parts of a Cheese – The pâte of a cheese is all that is within the rind or the crust of the cheese. The rind is the part of the cheese formed in the natural, external thickening of the surface, not all rinds are edible. A cheese has a natural rind when it has formed as a result of the drying of the outer surface during ageing. Some cheeses have eyes, which are holes or voids in a cheese produced by gas which has been unable to escape during the curing process.

These varying processes and environments create cheeses that are wildly different in texture, smell and taste, which we invite you to try as part of every meal during your culinary voyage of discovery.

How better to spend a relaxed, romantic holiday than sampling some of the country’s delectable delights aboard a barge cruise? Here are a few of the specialties you should definitely try…


Confit de Canard

An iconic delicacy, confit de canard is a rich dish made from salt-cured duck legs cooked in their own fat. Traditionally, it was designed as a filling and sustainable dish for the winter months (it can be preserved up to six months once cured and cooked) and is often served with baked new potatoes and green vegetables, or used in a cassoulet.

Foie Gras

While it might be the subject of some debate, there’s no doubt this is one of the most sought after gastronomic pleasures of the area. The rich, silky smooth duck liver pâté can be enjoyed on its own or incorporated in mousses, terrines, and soups. It’s quite often served up simply sliced and quickly seared in a pan.

Cassoulet

Readily available on most menus around Gascony, cassoulet is a thick, heavy stew made from beans, sausages, and the classic confit de canard. It’s hearty, flavorful and usually served up with huge chunks of crusty fresh bread.

Cheese

Gascony’s most famous cheese is the blue-marbled sheep’s milk cheese, Roquefort, which is still produced in the limestone caves of Combalou. Aged for a minimum of three months, the nutty, buttery flavor of Roquefort goes wonderfully with fruit (figs and prunes particularly) and wine.

Wines and Other Tipples

The wines of Gascony have a reputation as being among the best in the country, and any wine aficionado will have plenty to make them happy here.

The dry, fruity wines of the Côtes de Gascogne are outstanding, and you’ll also be able to sample some lovely Sauvignon Blancs. For lovers of red, the local barrel-aged Madiran is known for its deep brown color and lingering flavor.

As well as the classic reds and whites of the region, there are two other tipples you should not miss the opportunity to try, Armagnac made from fortified wine, and Floc, a sweet aperitif that is somewhat of an acquired taste.
Authentic Armagnac

This alcoholic beverage is a signature speciality of Gascony. It is the oldest brandy distilled in France. In the past, it was consumed for its therapeutic benefits. While it does share some similarities with its counterpart cognac, Armagnac is different from because of the way it is produced. 95% of the drink is distilled only once, using a specific form of continuous still – the Armagnac alembic. It is then aged in 400-liter oak barrels and stored in cellars. It can even be matured for up to 50 years before being packaged in glass bottles.

Armagnac can be divided into two main categories: vintage and non-vintage. Vintage Armagnacs are distilled from grapes grown in a single year, with the date displayed on the bottle. Non-vintage Armagnacs can either be labelled by age, where the number of years quoted relates to the youngest component of the blend or by category: VS (minimum two years in wood), VSOP (at least four years), XO (more than six years) or Hors d’Age (10 years plus).

Armagnac is usually produced by smaller family businesses rather than large global conglomerates which makes it a true delicacy that is ideally savoured in its place of origin.
Wine from Château Bellevue la Forêt

Included in Rosa's standard itinerary is a visit to the famous vineyard Château Bellevue la Forêt. For wine lovers, this gorgeous estate is akin to a sprawling paradise of vine and vino. Spread out over 270 acres, it’s the largest single privately-owned wine estate in the southwest of France and the wines produced here have won several accolades and awards worldwide.

Château Bellevue la Forêt is produced from the following fine varieties :
  • 57 hectares of NEGRETTE (a variety specific to the Fronton Appellation and rarely encountered elsewhere)
  • 6 hectares of CABERNET FRANC
  • 16 hectares of SYRAH
  • 12.5 hectares of CABERNET SAUVIGNON
  • 7 hectares of GAMAY
  • 2.3 hectares of white grapes (Viognier, Roussanne, Petit Manseng).

Liz, from the French Hotel Barge EMMA who cruises the Canal du Midi, pointed out this cheese cutting graphic found on http://eating.be.


Liz says:
All our guests will remember getting the cheese cutting lesson. Although we always said not to cut the point off the Brie but to angle it.


Thanks, Liz, but I love cheese no matter how it is cut. Just put the platter in front of me!

RECIPE: Breaded Camembert with a Port and Red Currant Sauce




This beautiful Baked Breaded Camembert with a Port and Red Currant Sauce recipe is a clear champion when it comes to dinner parties. Baked breaded Camembert is hassle-free and full of with flavor.

INGREDIENTS - Serves 4
  • 1 Camembert (not too ripe)
  • 4 oz fine bread crumbs
  • 1 beaten egg yolk
  • Small jar red currants in their natural juices
  • 3/4 cup port
  • Juice of one lemon
  • 3 tbs red currant jelly
  • Salt and ground black pepper

METHOD

  1. Cut the Camembert into quarters. Dip the quarters in the beaten egg yolk and then in the bread crumbs, making sure they are well covered. Place the Camembert in the freezer.
  2. To make the sauce, place the red currants, including the juice, into a saucepan. Add the port, lemon juice, red currant jelly, and seasoning. Bring to a boil and simmer until the sauce has reduced and thickened. Keep sauce on a low heat while cooking the Camembert.
  3. To cook the breaded Camembert, remove from the freezer 30 minutes before cooking. Lightly brush with nut oil and bake in a 475°F (245°C) oven for about 10 minutes or until golden brown and crisp.
  4. Serve with the port and red currant sauce.

Hotel Barging In France

On any of our hotel barge cruises, one of the wonderful ways you get to experience the best of your cruising region is through the gastronomy. Our barge chefs and sommeliers know the characteristics of the local wines and cheeses they serve and how best to pair the two together.


There are a number of similarities between wine and cheese, those staples of the French diet. Both go through a fermentation and aging process; both have flavors that vary depending on the soil, sunlight, rainfall and geography of the area in which they are produced. In France, both are given the esteemed certification of AOC (Appellation d'Origine Contrôlée) to indicate the quality and provenance of their traditional production.


Like wine, the tasting of cheese is something of a science, as different regions produce so many diverse flavors in all shapes, sizes and colors. If you are a cheese connoisseur, you will certainly be able to indulge your passion on any of our hotel barge cruises in France.

Cheeses can be classified in a number of different ways. For example, by the country or region of origin: a hard cheese made in the Alpine climes of Beaufort would be incredibly difficult to make in the flat, western region of Normandy.


Another difference is the method of production: for example, the outside of washed rind cheeses are repeatedly dusted with ‘morge’ – a mixture of brine, whey and old cheese scrapings – to create a colored rind, while the inside of a blue cheese is pricked with needles to grow blue mold.

These varying processes and environments create cheeses that are wildly different in texture, smell and taste, which we invite you to try as part of every meal during your "culinary voyage of discovery".

When you cruise on the Canal du Midi you will be introduced to the distinctive tastes of the region’s cheeses, with Roquefort Papillon, Cathare au Chèvre, and Tomme au Piment d’Espelette on the menu, paired with a local Corbières or Minervois wine.


In the Loire Valley you may be treated to a cheeseboard featuring Crottin de Chavignol, a creamy goats’ cheese that is surprisingly perfect with a dry, white wine from Sancerre. In Burgundy, Epoisses and Aisy Cendré are examples of cheeses served with full-bodied red wines sucha s Meursault or Santenay-les-Beaunes.
